Canan Kutay learned how to make samsa from her father-in-law, who originated from Turkistan. She chose to make samsa because, like many ancient dishes, this one is also becoming forgotten. Samsa was a unique dessert prepared on special days – religious holidays – to be offered to guests by her family. She thinks that because it is a time-consuming and difficult recipe it is rarely prepared in Istanbul households nowadays.
