Dumke is a Frisian biscuit/cookie. The dumke is the
thumb, and the biscuit is the size of a thumb. In Friesland it's prepared in
different ways. You can add crushed almonds or crushed hazelnuts or a
combination of these two. The anise gives the dumkes a characteristic flavour
and the ginger adds some spice to the dumkes.

the oven to 338 degrees F (170 degrees C).
diary butter and sugar to a bowl.
cinnamon, ginger and anise to the bowl.
Beat the egg
and add to the bowl.
flour, baking powder and almonds/hazelnuts.
knead the dough until it becomes a cohesive ball.
dough ball in a cooler for 30 minutes.
dough out until it becomes a rectangle of 1 cm thick.
dough in pieces of 1 by 2 by 4 by 5
Bake the dumkes 15-20 minutes in the oven.
