Saadet Sezer, 82 years old, lives in a small village in the Western Black Sea region in Turkey. Her family originated from Abkhasia in the Caucasus. She remembers that in the past they used to always eat this homemade bread prepared with sourdough. They used to cook bread and other kinds of pastry dishes in two earthenware ovens built in their garden. Their neighbours also came to cook their bread in their oven. Last year, her children reconstructed an oven of this kind in their garden. It is made with bricks and mortar, and walled with iron bars. Broken glass, stone and salt were laid underneath. She thinks that the taste of bread in this oven is superior to any other kind of bread. In the past instead of a tray, her mother used to cook this bread on walnut leaves.
