This cake is well-known in the south of West Flanders. It was often eaten by farmers on Fridays. That’s why they called Friday “biscuit cake day”. The cake gave enough energy for a day’s work. The potato and beet seasons were the heaviest ones so the farmers needed a lot of energy. This cake provided perfect nutrition for one of those heavy days.
Preheat the oven to 200°Mix the milk with the biscuits, the sugar and the vanilla sugar. Bring to the boil. Dissolve the vanilla powder in some water. Add to the milk and stir well. Take off the heat. Add all the eggs, one by one.Stir well.
