Limburgse witte, a typical Flemish ginDough:
¼ Cup of Milk
20 gr yeast
150 gr butter
250 gr flour
4 tsp sugarFor the decoration:
2 egg yolks
A handful of almond flakes
The cake is typical of the Limburg region. Fruit and gin are the best known products of the region. The cake is in fact a kind of a “Limburgse Vlaai”, the most famous cake from Limburg. This kind of cake is so special because it’s of the type of dough. It is more like bread dough and is lighter than the usual dough.
Grease a cake mould with butter.Peal and slice the apples.Take a piece of butter and melt it in a pan.Fry the apples.Take off the heat and allow to cool.Take a big spoonful of sugar, a piece of cinnamon and 3 tsp of the dried grapes.Mix with the apples.Put on the heat again.Stir till the water evaporates.Flambè with the gin. Heat the milk.Crumble the yeast into the lukewarm milkTake the soft butter.Separate the yolks from the whites.Take the flour and two tsp of sugar.Add the flour and two tsp of sugar.Start kneading.Add the yeast, milk and egg yolks to the butter.Knead well.Make two balls.Roll out the first ball.Place in the cake mould.Press well.Prick the dough with a fork.Cover it with plastic foil and a towel.Leave it to rise for 10 minutes. Mix a some egg yolk with water.Use it to glaze the crust of the dough.Pour the apples on the dough.Take the other ball of dough. Use it to make a kind of lid.Prick it.Bake the pie for about 15 minutes in an oven at 250°C.Take it out of the oven after 10 minutes.Cover with egg and almond flakes.Replace it in the lowest part of the oven for 5 minutes.
